There's the "Blow Up" missions from Simeon that i can think of right now. Whats wrong with being shot at? you can stack armor (access it from the quick menu , select or back on PS3/Xbox) same with Snacks, you can get them from the Shops. Put auto aim on, use cover and you'll be fine
